I would suggest picking stuff that looks fun and fits your idea of what makes sense for your character's story. Everything else will cost you to level up and while you may make some gold from selling stuff, you'll generally make more selling the raw mats. The only professions that are not 100% gold sinks are dual gathering like mining and herbalism. Alchemy because it's still the only profession that provides some perks (elixirs and flasks have double duration for them). I know people pick up Inscription because it's fun. And even though Engineering got shafted in bfa and tailoring can make some armor that is soulbound and upgradable and really good, I still don't regret it at all. I ended up dropping tailoring after everything was maxed out in Legion and picking up engineering because engineering was fun and it fit with my idea of what a Gnome should be. I did that initially when I started and absolutely regretted that combo. You could pick Tailoring and enchanting because this allows you to make cloth armor and some useful stuff in general (some enchanting mats you get from disenchanting are needed for tailoring). Honestly, I think picking a profession to help your class is overrated because the professions just haven't been that strong or useful for a while.
